Well, we are a bunch of pastor's wives from Minnesota who want to encourage and support other pastor's wives. We meet together on a regular basis for friendship and prayer. Our desire and purpose is to pray for our marriages, families, ministiries, and each other!

Wednesday's "Wife of the Week" - Thoughts and Recipe

This week, we are praying for Kristin of MN. I have asked her a few questions that might help us in our role as a pastor's wife. Kristin will be sharing with us some lessons God has taught her during her years in ministry. I also asked her to share one of her favorite recipes with us. ENJOY!

Here are two things that I have learned from being in ministry:
  • You have to BE a disciple to MAKE a disciple.  This applies not only in our ministries and in our churches but also in our own families.  (Our children should be our first priority in making disciples!)
  • It is alright to say, "NO" to good things.  You have to stay balanced!


Cheese and Basil Stuffed Shells

(This is a favorite recipe of mine.  I LOVE to cook.   So, it was hard to pick just one recipe!  My kids love this one too.)

 First, mix the following ingredients:
  • 1 carton Cottage Cheese
  • 3 c. Mozzarella cheese
  • 1/2 c. shredded Parmesan cheese
  • 1 bunch of basil leaves chopped (about 6 tbsp. - fresh basil is best) 

Second, cook shells until almost done.

 You will also need 2 cans of your favorite spaghetti sauce. (Our favorite is "Hunts Garlic and Herb" with some "Pampered Chef Italian Seasoning Blend" added to the sauce.)

Third, pour a little sauce on the bottom of  a 9x13 pan. (You can also do two 9x9 pans and freeze one.  This recipe serves 10-12 adults.)

Fourth, fill shells and lay in the pan on top of the sauce.

Fifth, pour remaining sauce on top of the shells.  Bake at 350 for an hour (or until it is bubbling).  Then, add some mozzarella cheese on top and put back in the oven for 15 min. or until cheese is melted.

Allow pan to rest on stove top for 10 minutes before eating (to allow cheese in shells set).
